The Ultimate Coffee Rub Ribs

We’ve created our first-ever Good as Gold recipe, in partnership with Chef Andres Morataya. This recipe was originally inspired by our desire to create something extra special for Father’s Day and upon reminiscing on wonderful family barbeques we’ve hosted and attended over the years, it was clear that our coffee could be served as more than a beverage and experienced in a new, equally-delicious way.

Behold, the Ultimate Coffee Rub Ribs. We’re thrilled to share this recipe with you below, but before we do, allow us to introduce Chef Andres Morataya. We worked with him directly to curate this simple, yet bold rub that yields incredible flavor. 

Based in Panama, Chef Morataya specializes in endemic cuisines. He believes in using his surroundings as a main source for inspiration and ingredients. His farm-to-table approach and unique style of cooking is what sets him apart and allowed him to experience different things, like being a guest judge on two seasons of the hit TV show Top Chef.

Ingredients:

1/4cup brown sugar

1/4cup light roast coffee*

2tbsp salt

1tbsp smoked paprika

1tbsp cumin

1tbsp garlic powder

 *The coffee:

Use fine-grind, light roast coffee. Fruity, chocolate, or nutty notes make for a nice rub. We suggest our Ethiopia, Burundi, Ethiopia Guji, Tanzania, coffees - shop below.

Materials: 

- Parchment paper

- Aluminum foil

This double-wrapping technique and baking at low temperature will ensure incredible texture and taste. Don't skip this step! 

Step 1

Make the rub: In a medium bowl combine all rub ingredients and mix well.

Step 2

Prepare the ribs: Coat the ribs all over with the dry rub. Place in the fridge for a few hours or overnight.

Step 3

Heat oven to 275 degrees. Place the ribs on parchment paper and fold in a way that will keep the juices inside. Wrap in aluminum foil, making sure you fold and press on all sides so the steam stays in, creating a tight seal (there should be as little space for air as possible). 

Step 4

Bake time should be 2.5-3.5 hours, depending on the thickness of the ribs. After the time, you can check on them (if the foil is folded nicely it should be easy to open). If they need more time, fold back and put them in the oven again. If they are good, fold them again and let them rest.

Step 5

Remove from package, glaze with juices and finish them on the grill or oven at high temp to create a crust. Serve & enjoy!
